Dudwell Teaching Kitchen

Fulcrum recently completed the fit-out at a new teaching kitchen at Dudwell in Somerset.
The operation is the brainchild of Lady Caroline Waldegrave who was the principal at Leiths School of Food & Wine in London from 1975 to 2002 – it was at this location that David Burnett first worked with Caroline, managing the refit of all four teaching kitchens.
The school at Dudwell aims to inspire chefs of all standards – all will benefit hugely from Caroline’s experience and expertise in the culinary arts.
The design, firmly led by Caroline, gives four central workstations each accommodating two students. There are two prep sink stations and a pot/pan wash area with overspray.
The cooksuite comprises four ‘Falcon’ ranges, 2no. 6-burners and 2no. 4-burners, together with 2no. Salamander grills.
There is also a rear pantry area with upright ‘Foster’ refrigerator/freezer and main pre-prep sinks. This area also accomodates the clients own laundry and dishwash machines.
The challenges of the installation mainly centred around the fabric of the listed building structure working with low-ceilings and battened-out walls. Normally simple matters such as wall-fixings for shelving needed careful thought and sourcing of suitable materials.
The extraction system, supplied and fitted by Fulcrum’s sub-contractors KVS, required careful co-ordination due to restricted ceiling height, cramped space for the duct and fan in the rear plant/boiler room, plus the need to powder coat all external louvres in line with planning approval requirements.

Lincoln’s Inn Bar & Kitchen

After a fastrack design and specification process, Fulcrum have been awarded the contract to supply and fit the extraction canopy , cold rooms and back-of-house cooksuite/prep areas at the Benugo Bar & Kitchen in Lincoln’s Inn Fields.
Formerly the Terrace Restaurant, Benugo were successful in their bid to completely revamp the site and run the catering offer for a fixed period contract. The Bar & Kitchen cafe is to cater for 64 covers within the building plus an additional 24 covers outside on the terrace. This will inevitably be a demanding foodservice environment and the galley-style pass area is designed with high turnover in mind. The ‘Blue Seal’ cooksuite and ‘Lainox’ combination oven are proven medium-duty ‘workhorse’  items
Working alongside architects PATH Design, surveyors Marzec Associates and main contractor Betacroft, the contract programme is extremely tight and necessarily so to minimise the downtime from approval of the lease to the first day of trading. With a 6 week turnaround from occupation to handover, this is a typical situation for Fulcrum and one that requires very hands-on project management.
Foster Coldstores are supplying and installing the external weatherproof dual-temperature cold stores (Chiller/Cellar temperatures) and KVS were sub-contracted by Fulcrum to supply and fit the cooksuite extract canopy, cut-around existing beams and height-limited by cross-bracing on the timber building framework.
